Sweet Potato x 2

Sweet potato two ways has become a go-to meal in our home mainly because it meets our favorite criteria: tasty, healthy, quick, and simple to make. 

Both my fiance and I are big foodies. We absolutely love trying new flavors, new restaurants, and interesting new recipes. What sets us apart when deciding what to order or what to cook is our preference in flavors. I'm a sour, spicy, savory kind of person, while he's more of a sweet-tooth.

Let's Begin!

1. Start by thoroughly washing your sweet potatoes

2. Pat dry and using a fork poke holes into your sweet potatoes. This allows steam to escape during the cooking process. 

3. Cooking one sweet potato at a time, microwave for 5 min. 

4. Flip sweet potato and microwave again 3-4 min, until soft and cooked through. 

5. Repeat steps 3 & 4 for the second sweet potato

While second sweet potato is cooking, begin your topping process. 

The Savory Sweet Potato! 

1. Place your cooked sweet potato in a bowl and cut in half. It should be hot (so be careful), soft, and completely cooked through. 

2. Liberally drizzle organic olive oil

2. Stuff your sweet potato with chopped avocado, chopped arugula, chopped cilantro, chopped parsley, and chopped red onion. 

3. Salt and pepper to taste

4. Enjoy!  

Okay, Now Let's Try Sweet Potato #2

1. Place your cooked sweet potato in a bowl and cut in half. It should be hot (so be careful), soft, and completely cooked through. 

2. Lightly drizzle organic olive oil 

3. Stuff your sweet potato with 1/2 a ripe banana, 1 teaspoon of almond butter, 1 teaspoon of coconut butter, 1 teaspoon of granola, a sprinkle of chopped almonds, and a sprinkle of chia seeds. 

4. Drizzle organic honey over the top and 2 dashes of ground cinnamon

5. Enjoy!
